A Refractometer is a precision optical instrument designed to measure the concentration or mixture ratio of water soluble fluids. It measures refractive index, the speed at which light passes through a liquid. The denser the liquid the slower the light will travel through it, and the higher its reading will be on the refractometer.
Like other indirect, analytical methods, the instrument is capable of measuring what it's supposed to, but can only provide data on a relative scale. So in order for it to be able to provide meaningful data, a correlation between numerous (Over 600 in this case) raw data points, including temperature
and sensor readings, and the target scale (Coffee TDS in this case), has to be developed. Because the make up of espresso compared to regular coffee,is so different, it requires it's own calibration, and/or instrument.
Using a standard refractometer or brix meter, without the neccessary correlation scale, will provide far less meaningful results. Because the amount of time and effort involved in creating a calibration for a sample type as complicated as coffee is so great, this product won the 2009 SCAA Best new Product Award, in the Educational & Training Category.
